Saint Patrick’s Day Gift

DSC_0301Is it true? Has Spring finally sprung?  They are calling for snow on Saint Patrick’s day, but the daffodils are coming up and I counted eight robins in my yard this morning. Surely beautiful weather can’t be too far off.

Today I give you my recipe for Corned Beef and Cabbage.  Quite simply the best!

Select a piece of corned beef brisket.  Place in a deep pot and cover well with cold water.  Bring to a boil.  Pour off all the water and again cover with cold water.  Add to the water: 1 clove garlic, 1 onion, 1/2 teaspoon allspice, 1/2 teaspoon nutmeg, 1/2 teaspoon cinnamon, 1 tablespoon sugar, 1 tablespoon vinegar.  Simmer gently until tender, allowing 20-30 minutes per pound.  (6 pound beef brisket will take approximately 3 hours). Add the cabbage (cut into quarters) and the potatoes into the same pot during the last 45 minutes of cook time.
