I confess — I have been a terrible blogger!   Where have I been?  What have I been doing? And what makes me think anyone even cares?  Important questions?  Not!!!  I will confess that since my last post I’ve managed to take procrastinating to new heights.

Don’t worry I’m not going to bore you with the details.  I am going to give you my recipe for the best Pesto ever.  I made my first batch of the summer yesterday.  Yum!  I cut this recipe out of Newsday a long time ago and have been making it every summer since.

Old Fashioned Pesto with Penne:  3-10 cloves of garlic, 3 1/2 cups fresh basil 1/2  cup grated Parmesan cheese, 4 tablespoons pine nuts, 3/4 cup olive oil, 1 pound of penne or favorite kind of pasta– 1.  Combine garlic with basil, Parmesan, and pine nuts in a food processor and process until smooth.  Slowly pour in olive oil in a steady stream and blend until smooth. 2. Cook one pound of pasta according to package directions and drain. Add pesto to pasta while pasta is still hot.  Makes 4-6 servings.

There’s still time for you to plant a pot of basil by your back door — you can have fresh pesto anytime– don’t procrastinate — do it!
